Baked Oatmeal



I added a bit of cinnamon and some vanilla extract for flavor and switched out the walnuts for almonds. Unless you really like your oatmeal sweet, I'd suggest halving the amount of brown sugar.




Ingredients
  • 2 cups uncooked quick-cooking oats
  • 1/2 cup packed brown sugar
  • 1/3 cup raisins
  • 1 tablespoon chopped walnuts
  • 1 teaspoon baking powder
  • 1 1/2 cups fat-free milk 
  • 1/2 cup applesauce
  • 2 tablespoons butter, melted
  • large egg, beaten
  • Cooking spray
Preparation
  1. Preheat oven to 375°.
  2. Combine the first 5 ingredients in a medium bowl. Combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.

Plum oatmeal muffins

I got this off of cooks.com, and it is so good!

In a blender puree enough plums to make 1 cup; set aside.

Cream 1/4 pound (1 stick) butter and 1 cup brown sugar. Add 1 egg and pureed plums.

Stir in:

1 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
Add:
1 1/2 c. old fashion oatmeal
1 c. flour
1 1/2 tsp. baking powder
Stir carefully only until moistened. Spray an unlined muffin pan with Pam in bottom of the pan put a pecan half centered between 2 slices of fresh plum. Fill muffin pans 2/3 full of batter and bake at 350 degrees for 20-5 minutes.

Remove from oven and invert while still hot. Replace any fruit and nut pieces that stay into pan in your muffins. Cool 5 minutes. Sprinkle with granulated sugar. Serve warm or cold. Can be frozen for later use.

OATMEAL CRANBERRY WHITE CHOCOLATE CHUNK COOKIES

these are one of my new go-to cookie recipes, they're like a cookie and a granola bar got together and had a baby...

INGREDIENTS:
2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white chocolate chunks or chips

DIRECTIONS:
Preheat oven to 375ºF.

Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Makes about 30 cookies.
